Roasted Tomatoes

I love pasta.  There was a time, especially before messy toddlers, where we'd eat pasta at least twice a week.  The carb goodness, drenched in dreamy sauce and don't forget the Parmesan cheese.  Yum.  And there are a hundred different shapes and sizes to pick from - all serving as a vessel for your tasty sauce.

This is a summer (and even fall favorite) in our home.  It's so easy and healthy.  I'm not opposed to the jar sauce, doctored with spices and splashed with veggies and meats, but this sauce is a perfect base for all those add-ins, with nothing (bad) added.

Start by preheating your oven to 425.  I line my baking sheet with tin foil for easy clean up, but this is totally up to your desire to scrub pans later.  Hey, whatever blows your hair back.  I use Roma tomatoes because of their sweet size, but you can pick whatever tomatoes you like and have available.  I am also particularly a fan of the pack of 10 from Costco.  Super cheap and always good, ripe quality.

Half the tomatoes, line on the sheet pan, skin side down, drizzle with olive oil and season generously with salt and pepper.  I use sea salt and cracked black pepper.  It makes me feel fancy, but you can use what's in your dinner-table shakers and it will work just fine.  If you have bigger tomatoes (like beefsteak) quarter them.

Roast at 425 for about 20 minutes or so.  Depending on how many you do, this time will vary, but you'll want them to look wrinkled when they come out.  Something like this.

These babies are pretty tasty on their own.  You could do a rough chop and add them to those jar sauces we were talking about earlier.  More often than not, I pull out the good ole food processor and puree these up with some garlic, red pepper flake, Italian seasoning, or anything else you'd like to add.  I have some fresh basil from the farmers market, so I see some fresh green in my future.  It makes a wonderful pasta sauce, or even pizza sauce if you're so include to skip the Dominoes pizza guy this Friday.
