Rainbow Pepper Medley

Refrigerate at least 3 hours before serving; 12 servings, 1/2 cup each

2 medium green peppers, julienne
2 medium sweet red peppers, julienne
1 medium sweet yellow pepper, julienne
1 small red onion, chopped
1 jalapeno, seeded and finely chopped

1/3 c canola oil
2 Tbsp tarragon vinegar
1 Tbsp Dijon mustard
2 tsp sugar
1 tsp salt
1 tsp lime zest
1/4 tsp pepper
1/4 Louisiana-style hot sauce

In a large bowl, combine vegetables. In smaller bowl, combine ingredients for dressing; whisk together. Pour over vegetables and toss to coat. Cover and refrigerate for at least 3 hours before serving.
